Preparation of Dough

    Boil the Potatoes

    Place the Russet potatoes in a large pot, cover with water, and bring to a boil. Cook until the potatoes are tender (about 20-30 minutes).

    Drain and Cool

    Drain the potatoes and let them cool slightly until you can handle them. Peel the skins off.

    Mash the Potatoes

    Using a potato masher or ricer, mash the potatoes until smooth and free of lumps. Let the mashed potatoes cool completely.

    Make the Dough

    In a large mixing bowl, combine the cooled mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour as needed.

Shaping and Cooking Gnocchi

    Divide the Dough

    Dust a clean surface with flour. Divide the dough into 4 equal portions to make it easier to work with.

    Roll and Cut

    Take one portion of dough and roll it into a long rope (about 1/2 inch in diameter). Cut the rope into 1-inch pieces to form the gnocchi.

    Shape the Gnocchi

    Using the back of a fork, gently press down on each piece to create ridges, which help hold the sauce better.

    Cook the Gnocchi

    In a large pot, bring 4 cups of water to a boil and add 1 tablespoon of salt. Add the gnocchi in batches, cooking until they float to the top (about 2-3 minutes).

    Drain and Serve

    Using a slotted spoon, remove the gnocchi and let them drain. If desired, drizzle with olive oil and garnish with fresh basil or parsley before serving.
