Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (about 110°F/43°C), sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, salt, garlic powder, dried oregano, and dried basil (if using).

Combine Ingredients
Make a well in the center of the flour mixture and add the activated yeast mixture along with the olive oil. Stir until a rough dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

First Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm, draft-free area for about 1-2 hours or until it doubles in size.

Shape the Dough
Once risen, punch the dough down to release air, then divide it into portions depending on the size of pizzas you want (medium, large, or extra-large). Shape each portion into a ball.

Cover the dough balls with a damp cloth and let them rise for another 30 minutes before using.
