Method
Pasta Dough
- 1
Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a rough dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.
Filling Preparation
- 2
Prepare the Meat Filling
In a skillet over medium heat, sauté the chopped onions until translucent. Add minced garlic and ground beef, cooking until browned. Stir in Italian seasoning, salt, pepper, and Parmesan cheese. Remove from heat and let cool.
- 3
Prepare the Cheese Filling
In a bowl, mix ricotta cheese, mozzarella cheese, Parmesan cheese, egg yolk, salt, pepper, and chopped basil until well combined. Set aside.
Meatball Preparation
- 4
Make the Meatballs
In a bowl, combine ground beef or turkey, breadcrumbs, egg, garlic powder, salt, black pepper, and parsley. Mix until combined, then shape into small balls. Place on a baking sheet.
Cooking
- 5
Cook the Meatballs
Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes until cooked through.
- 6
Roll Out the Dough
After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.
- 7
Assemble the Ravioli
Place small amounts of the chosen filling (meat or cheese) on one sheet of pasta, spaced evenly apart. Place another sheet of pasta over the top. Press down to seal around the filling, ensuring there are no air pockets. Cut into desired shapes.
- 8
Cook the Ravioli
In a large pot, bring salted water to a boil. Carefully add the ravioli and cook for 3-5 minutes until they float to the surface. Remove with a slotted spoon.
