Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables are softened.

Add Garlic and Zucchini
Stir in the minced garlic and diced zucchini. Cook for an additional 2-3 minutes until fragrant.

Add Tomatoes and Broth
Pour in the canned diced tomatoes and vegetable broth. Stir well to combine all ingredients.

Season the Soup
Add the dried oregano, dried basil, salt, and black pepper to the soup. Stir to mix the seasonings evenly.

Simmer the Soup
Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes to allow the flavors to meld.

Cook the Pasta
After simmering, add the tubettini pasta to the pot. Cook according to package instructions until al dente, usually about 8-10 minutes.

Adjust Seasoning
Taste the soup and adjust the seasoning with more salt and pepper if needed.

Ladle the minestrone soup into bowls and top with grated Parmesan cheese if desired. Serve hot.
