Preparation of Meat

    In a large mixing bowl, combine the ground pork and ground beef thoroughly using your hands or a spatula.

Mixing Spices

    Prepare Spice Mix

    In a separate small bowl, mix together the salt, black pepper, fennel seeds, paprika, garlic powder, crushed red pepper flakes, dried oregano, dried basil, and sugar until well blended.

Combining Ingredients

    Add the spice mix to the meat mixture along with the red wine and olive oil. Mix everything together until the spices and liquids are evenly distributed throughout the meat.

Resting the Mixture

    Let the Mixture Rest

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best flavor.

Forming Sausages

    Shape the Sausage

    After resting, take small portions of the sausage mixture and shape them into patties or links as desired. If using casings, stuff the mixture into the casings using a sausage stuffer.

Cooking
