Sausage Preparation

Prepare the Casings
Rinse the hog casings under cold running water to remove any salt. Soak them in a bowl of warm water for at least 30 minutes before using.

Mix the Sausage Ingredients
In a large bowl, combine the ground pork, ground beef, garlic powder, onion powder, paprika, black pepper, salt, dried oregano, and crushed red pepper flakes. Mix well using your hands or a spoon until evenly combined.

Add Water
Gradually add the water to the meat mixture and mix thoroughly until the mixture is sticky and holds together.

Stuff the Casings
Using a sausage stuffer, carefully fill the soaked hog casings with the sausage mixture. Twist the sausages into links, about 6 inches long, and tie the ends with kitchen twine.

Prick the Sausages
Using a needle or sharp knife, prick small holes in the sausages to allow air to escape during cooking.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried basil, salt, black pepper, and sugar. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.

Finish the Sauce
Once the sauce has thickened slightly, stir in the grated Parmesan cheese and cook for an additional 5 minutes until melted.

Cook the Sausages
In a large skillet over medium heat, add the sausage links and cook for 8-10 minutes, turning occasionally until browned and fully cooked through.

Serve the cooked sausage links hot with the homemade meat sauce drizzled over the top.
