Preparing Chicken Cutlet

Prepare the Chicken
Pound the chicken breasts to even thickness using a meat mallet, about 1/2 inch thick.

Set up Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

Bread the Chicken
Dredge each chicken breast in flour, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Fry the Chicken
Heat olive oil in a large skillet over medium heat. Fry the breaded chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Preheat Oven
Preheat your oven to 375°F (190°C).

Add Marinara Sauce
Spread 1/2 cup of marinara sauce on each submarine roll.

Layer Chicken and Cheese
Place one chicken cutlet on top of the marinara sauce, then top with remaining marinara sauce and sprinkle mozzarella cheese evenly over the top.

Bake the Sandwiches
Place the assembled sandwiches on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and golden.

Garnish and Serve
Remove the sandwiches from the oven, sprinkle with fresh basil leaves and grated Parmesan cheese. Serve immediately.
