Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it into the crumbs until well combined.

Press the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.

Prepare the filling
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Gradually add in the granulated sugar and continue to beat until fluffy.

Add remaining filling ingredients
Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until fully incorporated.

Bake the cheesecake
Pour the filling over the cooled crust. Bake in the preheated oven at 325°F (160°C) for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Cool and chill
Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Prepare the topping
In a small bowl, combine the fresh strawberries and blueberries. In another small bowl, mix the granulated sugar and lemon juice until dissolved. Pour over the berries and toss gently to coat.
