Prepare Cannoli Shells

Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Add the egg yolk and white wine to the dry ingredients and mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into 4-inch circles using a round cutter.

Fry the Shells
Heat vegetable oil in a deep frying pan to 350°F (175°C). Wrap each dough circle around a metal cannoli tube and secure the edges with a little water. Fry in hot oil until golden brown, about 2-3 minutes per side. Remove and let cool before carefully removing the tubes.

Mix the Filling
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Fold in the chocolate chips.

Using a piping bag, fill each cooled cannoli shell with the ricotta filling, ensuring they are filled well on both ends.
