Curry Preparation

    Sauté Vegetables

    In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices

    Sprinkle the curry powder over the sautéed onion mixture. Stir well to combine and cook for another minute to toast the spices slightly.

    Incorporate Liquids

    Pour in the coconut milk and vegetable broth, followed by the soy sauce, salt, and black pepper. Stir to combine all ingredients.

Cooking the Curry

    Add Vegetables and Tofu

    Add the diced potatoes, cubed tofu, and sliced bell peppers to the pot. Bring the mixture to a gentle simmer.

    Simmer

    Cover the pot and let the curry simmer for about 20-25 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.

    Adjust Seasoning

    Taste the curry and adjust seasoning with more salt or pepper as desired.

    Serve the curry hot over a bed of cooked rice. Top with chopped cilantro and a generous portion of pickled onion.
