Prepare the Potatoes
Wash, peel (if desired), and cut the potatoes into thin fries.

Fry the Potatoes
Heat oil in a deep frying pan. Once the oil is hot, add the potato fries in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and place on paper towels to drain excess oil. Sprinkle with salt.

Add Garlic and Ginger
Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

Prepare the Sauce
Add tomato puree, garam masala, turmeric, chili powder, and salt. Stir well and cook for 5 minutes.

Finish the Sauce
Pour in water and coconut cream, stirring to combine. Simmer for 10 minutes until thickened.
Fried Paneer Curds

Coat the Paneer
Toss the cubed paneer in cornstarch until evenly coated.

Fry the Paneer
In a frying pan, heat oil over medium-high heat. Fry the paneer cubes until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Pickle the Onions
Add sliced red onions to the pickling solution. Let sit for at least 30 minutes before serving.

Assemble the Poutine
On a serving plate, layer the fries, followed by the tikki masala sauce. Top with fried paneer curds, pickled red onions, and crumbled queso fresco. Drizzle with additional coconut cream if desired.
