    Prepare the Protein

    If using chicken, grill or sauté the chicken breast until fully cooked, about 6-8 minutes per side. For ground lamb, sauté in a skillet over medium heat until browned, about 5-7 minutes. For falafel, you can either fry or bake according to package instructions.

    Prepare Vegetables

    Dice the tomato and chop the romaine lettuce into bite-sized pieces. If you haven't done so already, prepare the pickled red onion by soaking thin slices of red onion in vinegar for at least 30 minutes.

    Assemble the Pita

    In a warm pita, layer the protein of your choice (falafel, chicken, or ground lamb), followed by tzatziki sauce, diced tomato, romaine lettuce, and pickled red onion.

Fries

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and cut the potatoes into thin fries. Place them in a large bowl.

    Season and Cook

    Drizzle the olive oil over the cut potatoes and sprinkle with salt and pepper. Toss to coat evenly. Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, turning halfway through, until crispy and golden.
