Prepare the Lamb Mixture

Cook the Lamb
In a skillet, heat the olive oil over medium heat. Add the ground lamb, garlic powder, onion powder, salt, and black pepper. Cook until the lamb is browned and cooked through, about 5-7 minutes. Stir in the diced jalapenos and cook for an additional 2 minutes.
Make the Queso Blanco Sauce

Prepare the Sauce
In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute. Gradually add the milk, whisking constantly until the mixture thickens, about 3-5 minutes. Stir in the shredded Monterey Jack cheese and cream cheese until melted and smooth. Fold in the diced jalapenos and season with salt to taste.
Assemble the Lava Royale

Build the Burger
On the bottom half of each brioche bun, layer a generous amount of the cooked lamb mixture. Top with cooked french fries and pour the queso blanco sauce over the fries. Place the top half of the bun on and serve immediately.
