For the Kati Roll Filling

    Cook the Lamb

    In a skillet over medium heat, add the ground lamb. Season with salt, black pepper, and cumin. Cook for about 8-10 minutes, breaking it apart until fully cooked.

    Add Egg

    Once the lamb is cooked, push it to the side of the skillet. Crack the egg into the empty space and scramble it. Mix it with the lamb until combined, then remove from heat.

    Prepare Avocado and Onions

    Slice the avocado and set it aside. If your pickled red onions are not ready, you can quickly pickle some by soaking red onion slices in vinegar for 30 minutes.

For the Cumin Aioli

    Mix the Aioli

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, ground cumin, and salt. Stir until well blended and set aside.

For the Paratha

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead until you have a smooth dough. Let it rest for 30 minutes.

    Cook the Paratha

    Divide the dough into equal portions and roll each one out into a thin circle. Heat a skillet over medium heat, add ghee or oil, and cook each paratha until golden brown on both sides.

For Serving

    Prepare the Fries

    Cook the frozen fries according to package instructions until crispy.

    Assemble the Kati Roll

    On each paratha, layer the lamb and egg mixture, avocado slices, pickled onions, and drizzle with cumin aioli. Roll it up tightly and serve with crispy fries on the side.
