Method

Preparation

  1. 1

    Prepare the Aromatics

Peel and thinly slice the garlic cloves and ginger. Set aside.

  2. 2

    Prepare the Spice Mix

In a small bowl, combine the dried red chili flakes, Sichuan peppercorns, and salt. Mix well and set aside.

Cooking

  1. 3

    Heat the Oils

In a medium saucepan, combine the vegetable oil and sesame oil. Heat over medium heat until the oil begins to shimmer, but do not let it smoke.

  2. 4

    Infuse the Aromatics

Add the sliced garlic, ginger, and star anise into the hot oil. Cook for about 2-3 minutes, stirring frequently, until the garlic is golden and fragrant.

  3. 5

    Add the Spice Mix

Remove the saucepan from heat and carefully add the spice mix (chili flakes, Sichuan peppercorns, and salt) into the hot oil. Stir well to combine.

  4. 6

    Allow to Cool

Let the chili oil cool to room temperature. This allows the flavors to meld together.

Storage

  1. 7

    Store the Chili Oil

Once cooled, pour the chili oil into a clean, airtight jar. Seal tightly and store in the refrigerator for up to 2 weeks.
