Hash Balls Preparation

Prepare the Hash Brown Mixture
In a large mixing bowl, combine the frozen hash browns, shredded cheddar cheese, chopped green onions, red onion, sour cream, and softened cream cheese. Mix well until all ingredients are evenly combined.

Form the Balls
Using your hands, take a small amount of the mixture (about 2 tablespoons) and form it into a ball. Repeat until all the mixture is used.

Coat the Balls
In a shallow dish, mix the all-purpose flour, salt, and black pepper. In another bowl, beat the eggs. Roll each hash ball first in the flour mixture, then dip in the beaten eggs, and finally return to the flour mixture to coat again.

Fry the Hash Balls
In a large frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the hash balls in batches, frying until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

In a medium bowl, combine the mayonnaise, chopped cilantro, lime juice, minced garlic, and salt to taste. Mix until smooth and well combined.
