Prepare the Breading Station
Set up three shallow bowls. In the first bowl, place the all-purpose flour mixed with salt, black pepper, and paprika. In the second bowl, beat the eggs. In the third bowl, place the panko breadcrumbs.

Bread the Cod
Pat the cod fillets dry with a paper towel. Dredge each fillet in the flour mixture, ensuring it is fully coated, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs. Set aside on a plate.

Fry the Cod
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded cod fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Prepare the Potatoes
Peel and cut the potatoes into thick strips to make fries. Rinse them under cold water to remove excess starch.

Fry the Potatoes
In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry for about 5-6 minutes or until golden and crispy. Remove from oil and drain on paper towels. Sprinkle with salt while hot.

Mix the Ingredients
In a small bowl, combine the mayonnaise, chopped pickles, chopped capers, lemon juice, and dijon mustard. Mix well until evenly combined. Season with salt and black pepper to taste.
