Prepare the Anticuchos

Add the Flank Steak
Cut the flank steak into 1-inch cubes and add them to the marinade. Make sure all pieces are coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

Skewer the Steak
After marinating, thread the marinated steak cubes onto the wooden skewers. Leave a little space between each piece to ensure even cooking.

Chop the bell peppers, red onion, and zucchini into bite-sized pieces.

Skewer the Vegetables
Thread the seasoned vegetables onto separate skewers, alternating between different veggies for variety.
Prepare the Aji Aioli

Mix the Aji Aioli
In a small bowl, combine mayonnaise, aji amarillo paste, minced garlic, and lime juice. Whisk until smooth. Season with salt to taste.
