Method

Prepare the Anticuchos

    Marinate the Flank Steak

    In a bowl, combine the aji panca paste, olive oil, minced garlic, lime juice, salt, and black pepper. Mix well to form a marinade.

    Add the Flank Steak

    Cut the flank steak into 1-inch cubes and add them to the marinade. Make sure all pieces are coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

    Skewer the Steak

    After marinating, thread the marinated steak cubes onto the wooden skewers. Leave a little space between each piece to ensure even cooking.

Prepare the Vegetable Medley

    Prepare the Vegetables

    Chop the bell peppers, red onion, and zucchini into bite-sized pieces.

    Season the Vegetables

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

    Skewer the Vegetables

    Thread the seasoned vegetables onto separate skewers, alternating between different veggies for variety.

Prepare the Aji Aioli

    Mix the Aji Aioli

    In a small bowl, combine mayonnaise, aji amarillo paste, minced garlic, and lime juice. Whisk until smooth. Season with salt to taste.

Grill the Anticuchos and Vegetables

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Skewers

    Place the skewers of flank steak and vegetables on the grill. Cook the steak for about 8-10 minutes, turning occasionally, until medium-rare. Grill the vegetable skewers for about 5-7 minutes until they are tender and have grill marks.

    Remove the skewers from the grill. Serve the anticuchos hot with the vegetable medley and a side of aji aioli for dipping.
