Bring 300 ml water to a near boil in a kettle or saucepan (just off the boil).

Boil water

Place 2 tablespoons of freshly ground dark roast coffee and 1 teaspoon of sugar into a small pot (or cezve/ibrik if making traditional style).

Prepare coffee

Pour about a quarter of the hot water into the pot with coffee and stir to make a paste. Then add the remaining water, return the pot to low heat and let the coffee heat slowly until foam rises (do not let it boil over). When foam rises, remove from heat. For a stronger brew, return to heat once more to let foam rise again, then remove.

Brew

Let the pot sit for 30–60 seconds so grounds settle to the bottom. Carefully pour the brewed coffee into a heatproof cup, leaving grounds behind.

Settle grounds

If using milk, warm 100 ml whole milk gently in a small saucepan until steaming but not boiling (about 60–65°C).

Heat milk

Froth the warmed milk using a milk frother or by whisking vigorously for 30–45 seconds until light foam forms. If you have a handheld electric frother, immerse it into the milk and froth until you have microfoam.

Froth milk

Pour brewed coffee into a cup, then gently add frothed milk on top, spooning foam as desired.

Combine

Sprinkle 1/4 teaspoon ground cinnamon or cocoa over the foam, and add 1 tablespoon chocolate shavings for extra flavor and presentation.

Weigh 360 g (0.36 kg) of green La Cedrela natural Colombia beans. This batch size is chosen to allow even heat distribution in a small home drum or sample roaster and yields about 300–310 g roasted (depends on roast level).

Weigh Beans

Preheat your roaster to a charge temperature appropriate for your machine. For a drum roaster, target 180–190°C (356–374°F) charge temp; for an air roaster, follow manufacturer's guidance. Ensure the roaster is stable before charging beans.

Preheat Roaster

Have a degassing container or a resealable bag with a one-way valve ready to transfer beans immediately after cooling. Natural processed coffees with extended fermentation release more gases and benefit from controlled degassing.

Prepare Degassing Container

Charge the 360 g of green beans into the roaster at the preheated temperature. Aim for a drying phase of 3:00–4:00 minutes until surface moisture is gone and beans are yellow and lightly steaming. Internal bean temperature should rise steadily; avoid scorching by keeping even airflow.

Charge and Drying Phase

Reduce heat slightly after drying to encourage a slow Maillard phase of 5:00–6:00 minutes. Watch for even browning and sugar browning aromas. Goal is to build sweetness and complexity without rushing into first crack. Bean color should transition to light brown.

Maillard / Development Ramp

Allow first crack to start—typical onset around 9:00–10:30 into roast depending on equipment. Once first crack begins, decrease heat modestly to lengthen development time and encourage clarity with natural-process fruit complexity. Extend development to achieve a ratio (development time:total roast time) of roughly 25–30% — for example total roast 12:00–14:00 minutes with 3:00–4:00 minutes of development after first crack. Listen and watch for signs of second crack; for this profile stop just at or slightly after the end of first crack (medium-light to medium roast) to preserve brightness and fruit.

First Crack and Extended Development

Rapidly cool the beans with airflow or a cooling tray immediately once the target development is reached. Aim to cool to ambient in under 3 minutes to lock in the profile and avoid carryover roast.

Cooling

Because this is a natural, extended fermentation lot, expect pronounced fruit aromatics (stone fruit, tropical notes), syrupy body potential, and delicate acidity. Keep notes on charge temp, turning point, first crack time, total roast time, and development time for reproducibility.

Batch Notes

Transfer cooled beans into the degassing container or valve bag. Allow the coffee to rest for 24–72 hours before brewing to let CO2 off-gas and flavors settle. For natural extended lots, some prefer 48–72 hours for peak sweetness and clarity; however, cupping at 24 hours will show fresher estery notes.

Resting

Store in a cool, dark place in an airtight container with minimal headspace. Avoid refrigeration/freezing for daily use; freeze only long-term in a sealed bag and thaw before opening.

Storage

Bring filtered water to 93°C (200°F) for cupping or adjust per your brewing method. Set grinder to an appropriate coarseness: coarse for French press, medium for drip, and medium-coarse for cupping (about sea salt texture for cupping).

Prepare Water and Equipment

Use a 60 g/L ratio for cupping: e.g., 12 g coffee to 200 g water (adjust to taste). For a 360 g roast batch, you can perform multiple 200 g brews or dripper brews for evaluation.

Cupping Ratio

Grind beans just before brewing. For cupping, grind to a medium-coarse, even particle distribution to allow consistent extraction of flavor and aroma.

Grind

Pour 200 g water at 93°C over 12 g coffee in a cupping bowl or dripper. For cupping: pour to fully saturate grounds and let steep 3:30–4:30 minutes, break crust at 4:00 minutes, spoon off grounds, then evaluate aroma and flavor as it cools. For drip or pour-over: aim for 2:30–3:30 minutes total brew time with appropriate grind adjustments.

Expect pronounced natural-process fruit-forward notes: stone fruit (peach/apricot), tropical fruit syrup, honeyed sweetness, medium to full body, and a bright but rounded acidity. Note any fermentation vola or unexpected off-notes; small extended naturals can present complex esters — record impressions and adjust roast slightly (shorter development for brighter acidity, slightly longer for more caramelization) in future roasts.

Turn on the espresso machine at least 20–30 minutes before brewing so the group head and boiler reach stable temperature. Run water through the group head for 5–10 seconds to clear cool water and stabilize temperature. Flush the portafilter and baskets with hot water; discard.

Machine warm-up

Weigh and grind coffee fresh from the 1 kg Brazil Santos bag. For a double espresso use 18–20 g dose; for a single shot use 9–10 g. Grind to a fine espresso setting. Start with 18 g in a double basket as baseline: weigh 18.0 g on the scale, grind directly into the portafilter basket.

Dose and grind

Distribute grounds evenly in the basket with a gentle tap or distribution tool to remove voids. Use a tamper to apply 30 pounds (approx. 13.6 kg) of pressure, holding the tamper level. Polish with a slight twist and wipe any excess from the portafilter rim.

Distribution and tamp

Lock the portafilter into the group head and start the shot. Use a short pre-infusion if your machine supports it (2–4 seconds at low pressure) to wet the puck evenly, then ramp to full pressure. Start the timer at the first visible drip. Aim for 25–30 seconds total extraction time for 18 g in -> 36–40 g out (1:2 ratio) as a starting target for balanced body and sweetness. Adjust grind finer if extraction is faster than 22 seconds or yields under target; grind coarser if over 35 seconds or puck is very slow and bitter.

Pre-infusion and extraction

Weigh shot yield on the scale to reach the target weight (36–40 g for 18 g dose). Note taste: Brazil Santos typically offers chocolatey, nutty notes with medium acidity — if shot tastes sour, slow extraction or under-extracted, grind finer; if bitter/astringent, grind coarser or shorten extraction.

Monitor yield and temperature

Serve immediately into pre-warmed cups. For milk drinks, steam milk to 60–65°C (140–149°F) and texture to microfoam; pour over the espresso. After brewing, knock out the puck into the knock box, rinse and dry the portafilter and basket. If using the 1 kg bag over multiple days, reseal the bag tightly (use a clamp or transfer to an airtight canister) and store in a cool, dark place away from strong odors. Use within 2–3 weeks of opening for best freshness.

Serve and store

Backflush the group head with water and a cleaning detergent per manufacturer recommendations at the end of the day. Rinse portafilter, baskets, and steam wand after each use. Purge steam wand before and after steaming; wipe with a clean damp cloth. Run 50–100 ml of hot water through the grinder chute after grinding large amounts to clear residual oils.

Preheat your espresso machine and portafilter by running a blank shot for a few seconds. Weigh 18 g of Brazil Santos beans. Grind to a fine espresso grind (similar to table salt).

Preheat and dose

Place the 18 g freshly ground coffee into the portafilter. Distribute grounds evenly, then tamp with consistent pressure (about 30 lbs / 13 kg) to create a level puck.

Prepare the puck

Lock the portafilter into the machine. Brew using a 1:2 ratio target: 18 g grounds to 36 ml espresso. Start extraction immediately and aim for a 25–30 second extraction time. Stop the shot when you reach ~36 ml of liquid espresso.

The espresso should show a caramel-colored crema with balanced sweetness, chocolate and nutty notes typical of Brazil Santos.

Check

Pour 60 ml cold whole milk into a steel pitcher. Purge the steam wand briefly, then submerge and steam to 55–65°C (130–150°F) aiming for silky microfoam. Tap and swirl the pitcher to remove large bubbles.

Steam milk (if using)

If using heavy cream, lightly froth 30 ml with a hand frother or by shaking in a sealed jar to create a slight foam. This produces a richer, creamier variation.

Froth cream (alternative)

Pour the shot of Brazil Santos espresso into a demitasse or small cup. For a macchiato, spoon a small dollop (10–20 ml) of milk foam on top. For a cortado-style balance, add the steamed milk (60 ml) gently to yield a smooth, balanced drink. For a richer sip, add the frothed heavy cream on top.

If desired, stir in 1 tsp simple syrup or sugar into the espresso immediately after brewing to dissolve evenly.

Sweeten

Lightly dust the finished drink with 1 tsp cocoa powder or a few shavings of dark chocolate to complement the nutty, chocolate notes of the Brazil Santos espresso.

Garnish

Serve the Brazil Santos espresso immediately while hot. Rinse and purge the steam wand (if used), knock out the spent puck, and clean tools to maintain coffee quality for the next shot.

Когда вода полностью пройдет через дрип-пакет, аккуратно выньте и утилизируйте пакет с остатками кофе. Налейте кофе в кружку, при необходимости добавьте сахар, мёд или молоко по вкусу.

Коли вода повністю пройде через каву (краплі стануть рідкими й ритмічними), обережно знімiть дріп-пакет і викиньте. Легко перемішайте каву ложкою, щоб вирівняти екстракцію, і подавайте одразу.

Фініш і подача

Температура води: якщо кава здається занадто кислою — зменште температуру до ~90°C або трохи збільште час контакту (повільніший пролив). Якщо вона плоска або недоекстрагована — підвищте температуру до 94–96°C або трохи пришвидшіть пролив (більший об'єм води на початку).

Кількість води: упаковка 7 дріпів розрахована на 7 чашок по ~200 ml кожна (загалом ~1400 ml). Якщо любите міцнішу каву, використайте менше води (180–190 ml на пакет); для слабшої — 220 ml.
