Boil water

Bring 300 ml water to a near boil in a kettle or saucepan (just off the boil).

Prepare coffee

Place 2 tablespoons of freshly ground dark roast coffee and 1 teaspoon of sugar into a small pot (or cezve/ibrik if making traditional style).

Brew

Pour about a quarter of the hot water into the pot with coffee and stir to make a paste. Then add the remaining water, return the pot to low heat and let the coffee heat slowly until foam rises (do not let it boil over). When foam rises, remove from heat. For a stronger brew, return to heat once more to let foam rise again, then remove.

Settle grounds

Let the pot sit for 30–60 seconds so grounds settle to the bottom. Carefully pour the brewed coffee into a heatproof cup, leaving grounds behind.

Milk & foam (optional)

Heat milk

If using milk, warm 100 ml whole milk gently in a small saucepan until steaming but not boiling (about 60–65°C).

Froth milk

Froth the warmed milk using a milk frother or by whisking vigorously for 30–45 seconds until light foam forms. If you have a handheld electric frother, immerse it into the milk and froth until you have microfoam.

Combine

Pour brewed coffee into a cup, then gently add frothed milk on top, spooning foam as desired.

Garnish (optional)

Sprinkle 1/4 teaspoon ground cinnamon or cocoa over the foam, and add 1 tablespoon chocolate shavings for extra flavor and presentation.
