Hummus Preparation

    Cook the Lentils

    In a saucepan, combine red lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until lentils are soft. Drain any excess water.

    Blend the Ingredients

    In a food processor, combine cooked lentils, garlic, tahini, lemon juice, olive oil, cumin, salt, and water. Blend until smooth and creamy. Adjust seasoning as needed.

Basil Pistou Preparation

    Make the Pistou

    In a food processor, combine basil leaves, garlic, olive oil, Parmesan cheese, and salt. Blend until smooth. Adjust seasoning if necessary.

Flax Seed Crackers Preparation

    Prepare the Crackers

    Preheat oven to 350°F (175°C). In a bowl, mix ground flax seeds, water, and salt. Let it sit for 10 minutes until thickened. Spread the mixture onto a baking sheet lined with parchment paper to form a thin layer. Bake for 20-25 minutes or until crispy. Let cool and break into pieces.

    Serve the Dish

    Spoon the red lentil hummus into a serving bowl. Drizzle with basil pistou, and sprinkle with Okanagan sumac. Garnish with sunflower shoots and serve alongside flax seed crackers.
