Prepare Eggplant

Slice the eggplant into 1/2 inch thick rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then rinse and pat dry.

Cook Eggplant

Heat olive oil in a skillet over medium heat. Add the eggplant slices and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.

Assemble Sandwich

Slice the kaiser rolls in half and toast lightly if desired. Spread a layer of tomato sauce on the bottom of each roll, then layer with cooked eggplant, butter-leaf lettuce, and slices of gouda cheese.

Finish Sandwich

Top with the other half of the roll and serve immediately. Optional: Warm the assembled sandwich in the oven for 5 minutes to melt the cheese.
