Prepare the Dough

In a large mixing bowl, combine the ground flaxseed, salt, garlic powder, onion powder, and dried herbs. Mix well.

Add Wet Ingredients

Add the water and olive oil to the dry ingredients. Stir until a thick dough forms. If the mixture is too dry, add a little more water until it reaches a pliable consistency.

Roll Out the Dough

Divide the dough into two portions. Place one portion between two sheets of parchment paper and roll it out to about 1/8 inch thickness. Repeat with the second portion.

Cut the Crackers

Remove the top sheet of parchment and cut the rolled-out dough into desired shapes using a pizza cutter or knife. Sprinkle sesame seeds on top and gently press them into the dough.

Bake the Crackers

Transfer the dough (still on the parchment paper) onto a baking sheet. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the edges are golden brown and the crackers are crisp.

Cool and Serve

Remove the crackers from the oven and let them cool on a wire rack. Once cooled, break them apart and serve as a snack or with dips.
