Preparation of Lamb

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, salt, black pepper, and chopped rosemary. Rub this mixture all over the lamb sirloin and let it marinate for at least 30 minutes.

    Grill the Lamb

    Preheat the grill to medium-high heat. Grill the marinated lamb sirloin for about 4-5 minutes on each side for medium-rare doneness. Remove from the grill and let it rest for 10 minutes before slicing.

Wild Rice Preparation

    Cook the Wild Rice

    In a saucepan, combine the Alberta wild rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and water is absorbed.

Huancaína Sauce Preparation

    Make Huancaína Sauce

    In a blender, combine roasted red pepper, queso fresco, evaporated milk, yellow chili pepper paste, and lemon juice. Blend until smooth. Adjust seasoning to taste.

Grilled Vegetables

    Grill the Zucchini and Radicchio

    Brush the zucchini slices and radicchio halves with olive oil, and season with salt and pepper. Grill over medium heat for about 3-4 minutes per side until tender and slightly charred.
