Preparing the Boar Belly

    Cooking the Boar Belly

    Preheat the oven to 300°F (150°C). Rub the wild boar belly with salt and black pepper. Place it in a roasting pan and cover with foil. Roast for 3 hours or until tender.

    Sautéing the Mushrooms

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the BC Morel mushrooms and sauté for 5-7 minutes until browned. Remove from heat and set aside.

Making the Potato Pancake

    Preparing the Potato Mixture

    Grate the Poplar Bluff potatoes and mix them with chopped green onions and lovage leaves in a bowl. Season with salt and pepper.

    Cooking the Pancakes

    In the same skillet, heat 1 tablespoon of butter over medium heat. Form the potato mixture into pancakes and cook for 4-5 minutes on each side until golden brown. Set aside.

Finishing Touches

    Combining Ingredients

    Slice the cooked wild boar belly and serve it on a plate alongside the potato pancakes. Top with sautéed morel mushrooms and garnish with additional green onions and lovage.

    Adding Glen's Plums

    Slice Glen's plums and serve them fresh on the side or as a garnish on top of the dish.
