Leek & Potato Vichyssoise

Brown Butter

Halibut

Method

Prepare Vichyssoise

  1. 1

    Cook Leeks and Potatoes

In a large pot, heat olive oil over medium heat. Add the leeks and sauté until softened, about 5 minutes. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

  2. 2

    Blend and Season

Remove from heat and let cool slightly. Puree the mixture using an immersion blender or in batches in a regular blender until smooth. Stir in heavy cream and season with salt and pepper to taste.

Prepare Brown Butter

  1. 3

    Brown the Butter

In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter turns golden brown and develops a nutty aroma, about 5-7 minutes. Remove from heat.

Cook Halibut

  1. 4

    Season and Sear Halibut

Season the halibut fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the halibut for about 4-5 minutes on each side, or until cooked through and golden brown.

Assemble and Serve

  1. 5

    Plate the Dish

In bowls, ladle the vichyssoise. Place a piece of seared halibut on top of the soup. Drizzle with brown butter, and garnish with sliced radishes, butter leaf lettuce, and tarragon.
