Tomato Preparation

    Roast the Tomatoes

    Preheat the oven to 375°F (190°C). Cut the Gull Valley tomatoes in half and place them on a baking sheet. Drizzle with Greidanus honey and roast for 30 minutes until tender.

    Prepare Rhubarb Gel

    While the tomatoes are roasting, prepare the rhubarb gel by combining rhubarb puree with a bit of sugar over low heat until thickened. Set aside.

Salad Assembly

    Slice Radishes

    Thinly slice the Southern Skies radishes and set them aside.

    Plate the Dish

    On a serving platter, arrange the roasted tomatoes. Top with slices of radish, dollops of Fairwinds Farm goat chèvre, and drizzle with cherry cider. Finish with nasturtium leaves for garnish.

    Serve

    Serve immediately as a fresh appetizer or side dish.
