Flatbread Preparation

Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Lamb Ragù Preparation

Cook the Lamb
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add ground lamb and cook until browned.

Add Vegetables
Stir in the diced red bell pepper, crushed tomatoes, and tomato paste. Add oregano, salt, and pepper. Simmer for 20-30 minutes, stirring occasionally.
Assemble and Bake

Shape the Flatbread
Preheat the oven to 425°F (220°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a flat round shape.

Add Toppings and Bake
Place flatbreads on a baking sheet. Spread the lamb ragù evenly over each flatbread, then sprinkle with grated Gouda and crumbled feta. Bake for 15-20 minutes or until the cheese is melted and bubbly.

Remove from oven, garnish with fresh parsley, slice, and serve hot.
