Method

Prepare Duck Breast

    Score and Season

    Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Grill Duck Breast

    Preheat the grill to medium-high heat. Place the duck breast skin-side down on the grill and cook for about 6-8 minutes, until the skin is crispy. Flip and cook for an additional 4-6 minutes for medium-rare. Remove from grill and let rest.

Prepare Hydragreens Romaine

    Grill Romaine

    Toss the Hydragreens Romaine with olive oil, lemon juice, salt, and pepper. Grill for 2-3 minutes on each side until lightly charred and wilted.

Make Walnut Mole

    Blend Ingredients

    In a blender or food processor, combine walnuts, garlic, cumin, cocoa powder, and vegetable broth. Blend until smooth. Season with salt to taste.

Prepare Sour Cherries

    In a small saucepan, combine sour cherries, sugar, and lemon juice. Cook over medium heat until the cherries are softened and the mixture thickens slightly, about 5-7 minutes.

Assemble the Dish

    Slice the duck breast and arrange on a plate. Serve with grilled Hydragreens Romaine, drizzled with walnut mole and topped with sour cherries.
