Method

Beef Preparation

    Season the Steak

    Rub the Angus beef flank steak with olive oil, salt, and black pepper. Let it marinate for at least 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the flank steak for about 6-8 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.

Roasted Turnip Purée

    Roast the Turnips

    Preheat the oven to 200°C (400°F). Toss the chopped turnips with some olive oil, salt, and pepper, and roast for 25-30 minutes until tender.

    Make the Purée

    In a blender, combine the roasted turnips, butter, and cream. Blend until smooth and adjust seasoning if needed.

Oyster Mushrooms Preparation

    Sauté the Mushrooms

    In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute, then add the oyster mushrooms and sauté for 5-7 minutes until golden.

Alberta Emmer Wheat Preparation

    Cook the Emmer Wheat

    In a pot, bring water and salt to a boil. Add the emmer wheat, reduce heat to low, and simmer for 25-30 minutes until tender. Drain if necessary.

Nettle Verde Preparation

    Make the Nettle Verde

    In a blender, combine the blanched nettle leaves, olive oil, lemon juice, and salt. Blend until smooth and adjust seasoning if needed.
