Method

Prepare the Rice

    Sauté the Aromatics

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Add Rice and Spices

    Stir in the long-grain white rice, tomato paste, cumin powder, paprika, salt, and black pepper. Cook for another 2 minutes, stirring frequently.

    Cook the Rice

    Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Garnish

    Fold in chopped cilantro after fluffing the rice.

Prepare the Beans

    Combine Beans

    In a medium bowl, combine the drained and rinsed black beans, lime juice, and salt. Mash slightly with a fork to combine, leaving some beans whole for texture.

Assemble the Burritos

    Fill the Tortillas

    Lay out the large flour tortillas on a flat surface. In the center of each tortilla, add a portion of the Spanish rice, followed by a portion of the seasoned black beans.

    Add Optional Toppings

    If desired, sprinkle shredded cheese and add a dollop of sour cream on top of the rice and beans.

    Roll the Burritos

    Fold the sides of the tortillas over the filling, then roll them up tightly from the bottom to the top to enclose the filling.

    Serve

    Cut the burritos in half and serve with additional cilantro or lime wedges on the side, if desired.
