    Cook the Beef

    In a large skillet over medium-high heat, add the olive oil. Once hot, add the diced beef and season with salt and black pepper. Cook until browned, about 5-7 minutes.

    Prepare the Green Sauce

    While the beef is cooking, finely chop the onion, tomato, jalapeno, and green chili. Once the beef is browned, add the chopped vegetables to the skillet.

    Reduce the heat to medium-low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.

Burrito Assembly

    Warm the Tortillas

    In a dry skillet or microwave, warm the flour tortillas until soft and pliable.

    Assemble the Burrito

    Place a generous scoop of the beef and green chili mixture in the center of each tortilla. Optionally, add shredded cheese and a spoonful of sour cream.

    Roll the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to encase the filling completely. Repeat with the remaining tortillas.
