Prepare Ingredients

Gather all the ingredients and prepare them for cooking. Shred the cheese, cook and shred the chicken or ground beef if not already done. Dice the bell pepper and onion.

Heat the Skillet

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Sauté Vegetables

Add the diced bell pepper and onion to the skillet. Cook for about 3-4 minutes until softened. Remove from skillet and set aside.

Assemble Quesadilla

In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet, then layer half of the cheddar cheese, half of the Monterey Jack cheese, the sautéed vegetables, and your choice of meat. Top with the remaining cheese and another tortilla.

Cook Quesadilla

Cook for about 4-5 minutes or until the bottom tortilla is golden brown and the cheese has started to melt. Carefully flip the quesadilla using a spatula and cook for an additional 4-5 minutes on the other side.

Serve

Once both sides are golden brown and the cheese is fully melted, remove the quesadilla from the skillet. Cut into wedges and serve with salsa or sour cream if desired.
