1. Soak the Rice
In a bowl, combine the long-grain white rice and 2 cups of water. Allow it to soak for at least 4 hours or overnight. This helps soften the rice for blending.
2. Blend the Rice
After soaking, drain the rice and place it in a blender. Add the remaining 2 cups of water, 1 cup of milk, vanilla extract, and the cinnamon sticks. Blend until the mixture is smooth.
3. Strain the Mixture
Using a fine mesh strainer or cheesecloth, strain the blended mixture into a large pitcher or bowl. Press down to extract as much liquid as possible. Discard the leftover rice solids.
4. Add Sugar and Cinnamon
Stir in the sugar, ground cinnamon, and a pinch of salt into the strained liquid. Adjust the sweetness to your taste, adding more sugar if desired.
5. Mix in Remaining Milk
Add the remaining 1 cup of milk to the mixture and stir well to combine. Refrigerate the horchata for at least 1 hour to chill and allow the flavors to meld.
6. Serve
Serve the horchata chilled over ice, and garnish with a sprinkle of ground cinnamon on top if desired.
