Method

Chimichanga Filling

  1. 1

    Prepare the Beef Filling

In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula.

  2. 2

    Add Vegetables and Seasonings

Add the chopped onion, minced garlic, red chili powder, salt, and pepper to the skillet. Cook until the onion is translucent.

  3. 3

    Incorporate Beans and Cheese

Stir in the black beans and shredded cheddar cheese until the cheese is melted and everything is well combined. Remove from heat.

Chimichanga Assembly

  1. 4

    Prepare the Tortillas

Lay out the flour tortillas on a clean surface. Divide the beef filling equally among the tortillas.

  2. 5

    Roll the Tortillas

Fold in the sides of the tortillas, then roll them up tightly to enclose the filling completely.

  3. 6

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 7

    Fry the Chimichangas

Carefully place the rolled chimichangas in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
