Tamale Dough Preparation

Mix Dry Ingredients
In a large bowl, combine masa harina, baking powder, and salt. Mix well to ensure even distribution.

Incorporate Shortening
Add vegetable shortening to the dry ingredients. Using your hands or a pastry cutter, mix until the mixture resembles coarse crumbs.

Add Liquid
Gradually pour in vegetable broth while mixing. Continue to mix until a soft and pliable dough forms. Set aside.

Prepare Filling
In a medium bowl, combine fresh corn kernels, chopped green chilies, finely chopped onion, cilantro, lime juice, and salt. Mix until all ingredients are well combined.
Assembly and Cooking

Soak Corn Husks
In a bowl of warm water, soak dried corn husks for about 30 minutes until soft and pliable. Drain and pat dry.

Assemble Tamales
Take a soaked corn husk, spread about 1/4 cup of tamale dough in the center, leaving the sides clear. Place 2 tablespoons of filling on top of the dough. Fold the sides of the husk over the dough and filling, then fold the bottom up to secure.

Tamales are done when the dough pulls away easily from the husk. Let them cool slightly before serving.
