Filling

Method

Filling Preparation

  1. 1

    Sauté the Onion and Garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until the onion is translucent. Then, add the minced garlic and cook for an additional minute until fragrant.

  2. 2

    Add the Beans and Chilies

Stir in the black beans and pinto beans (drained and rinsed), diced green chilies, cumin powder, salt, and black pepper. Mix well and cook for about 5-7 minutes until heated through.

  3. 3

    Finish the Filling

Remove the skillet from the heat and stir in the lime juice. Taste and adjust seasoning if necessary.

Burrito Assembly

  1. 4

    Prepare the Tortillas

Warm the large flour tortillas in a dry skillet or microwave until soft and pliable, about 10-15 seconds per tortilla.

  2. 5

    Fill the Tortillas

Place a generous amount of the filling mixture (about 1/2 cup) in the center of each tortilla. Top with shredded cheese, sour cream, and chopped cilantro.

  3. 6

    Roll the Burritos

Fold the sides of the tortilla inward, then roll from the bottom up to enclose the filling. Make sure to roll tightly to secure the ingredients.

  4. 7

    Serve

Serve the burritos warm, with additional sour cream and cilantro on the side if desired.
