Method

Prepare the Enchilada Sauce

  1. 1

    Make the Sauce

In a medium saucepan over medium heat, combine the red enchilada sauce, olive oil, garlic powder, onion powder, cumin, salt, and black pepper. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.

Prepare the Burritos

  1. 2

    Fill the Tortillas

In a large mixing bowl, combine the shredded cooked chicken, black beans, corn, and green chili sauce. Mix well. Take a flour tortilla, and place about 1/2 cup of the filling in the center of the tortilla. Roll the tortilla tightly, folding in the sides as you roll to secure the filling.

  2. 3

    Assemble the Burritos

Repeat the filling and rolling process for the remaining tortillas. Place each rolled burrito seam-side down in a greased baking dish.

Assemble and Bake

  1. 4

    Smother with Sauce

Preheat your oven to 350°F (175°C). Pour the prepared enchilada sauce evenly over the burritos in the baking dish, ensuring they are well covered.

  2. 5

    Add Cheese

Sprinkle the shredded cheddar cheese evenly on top of the smothered burritos.

  3. 6

    Bake

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

Serve

  1. 7

    Garnish and Serve

Remove the burritos from the oven and let them cool slightly. Top with shredded lettuce, diced tomatoes, and fresh cilantro before serving.
