Preparation of Rice

    Cook the Rice

    In a medium saucepan, combine the long-grain white rice, water, and salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

    Heat the Beans

    In a small saucepan, combine the canned black beans (drained and rinsed), cumin, chili powder, and salt. Heat over medium heat until warmed through, about 5-7 minutes. Stir occasionally.

    Cook the Meat

    In a skillet over medium heat, add the ground beef or chicken. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat, then stir in taco seasoning. Add a little water if needed. Cook for another 2-3 minutes until well combined.

Assembly of Burrito

    Assemble the Burritos

    On each large flour tortilla, layer 1/4 cup of cooked rice, 1/4 cup of heated black beans, and your choice of meat (if using). Top with shredded cheese, sour cream, salsa, chopped lettuce, and diced tomatoes.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Make sure to hold in the sides while rolling to keep the filling secure.
