Prepare the Enchilada Sauce

    Sauté the Onions and Garlic

    In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Make the Sauce

    Add the canned tomato sauce, chili powder, cumin, salt, and water to the saucepan. Stir well to combine and bring to a simmer. Reduce the heat and let simmer for about 10 minutes, stirring occasionally.

Prepare the Burrito Filling

    Mix the Filling Ingredients

    In a bowl, combine the cooked black beans, cooked rice, shredded cheese, sour cream, chopped cilantro, and taco seasoning. Mix until well combined.

Assemble the Burritos

    Fill the Tortillas

    Lay a large flour tortilla flat on a clean surface. Spoon about 1/4 of the bean filling onto the center of the tortilla. Fold the sides over the filling and then roll from the bottom up to form a burrito. Repeat with the remaining tortillas.

    Prepare for Baking

    Preheat the oven to 375°F (190°C). Spread a thin layer of the enchilada sauce on the bottom of a baking dish to prevent sticking. Place the assembled burritos seam-side down in the dish.

    Top with Sauce and Cheese

    Pour the remaining enchilada sauce over the burritos evenly. Sprinkle additional shredded cheese on top.

Bake and Serve

    Bake the Burritos

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Remove from the oven and let cool slightly. Serve warm, garnished with sour cream and chopped cilantro as desired.
