Preparation

    Prepare the Orata

    Preheat the wood oven to a high temperature (around 220°C/428°F). Rub the orata with olive oil, salt, and black pepper. Place lemon slices inside the cavity of the fish.

    Make the Salsa Verde

    In a bowl, combine chopped parsley, minced garlic, chopped capers, lemon juice, and olive oil. Season with salt and black pepper to taste. Mix well and set aside.

    Prepare the Charred Green Beans

    Toss green beans with olive oil, salt, and black pepper. Set aside until ready to grill.

    Make the Pistachio Yogurt

    In a bowl, combine Greek yogurt, chopped pistachios, lemon zest, and salt. Mix well and set aside.

Cooking

    Roast the Orata

    Place the prepared orata in the wood oven and roast for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

    Grill the Green Beans

    In the last 10 minutes of roasting the fish, add the green beans to the grill and cook until charred and tender.

Serving

    Plate the Dish

    Once the fish and green beans are cooked, remove them from the oven. Serve the roasted orata topped with salsa verde, alongside charred green beans and a dollop of pistachio yogurt. Serve with grilled lemon halves.
