    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain and pat dry the soaked potatoes. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain them on paper towels. While they are still hot, drizzle with truffle oil, and season with salt and pepper.

    Add Cheese and Parsley

    Grate the Parmigiano-Reggiano cheese over the hot fries and sprinkle with chopped fresh parsley before serving.
