Preparation Steps
- 1
Prepare the Ingredients
Clean the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped. Slice the leeks and fennel thinly. Mince the garlic.
- 2
Cook the Sausage
In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- 3
- 4
Add Tomato Broth
Pour in the tomato broth and bring the mixture to a simmer. Season with salt and black pepper to taste.
- 5
Steam the Mussels
Add the cleaned mussels to the pot, covering it with a lid. Steam for about 5-7 minutes, or until the mussels have opened.
- 6
Garnish and Serve
Remove the pot from heat. Discard any mussels that did not open. Stir in chopped fresh parsley. Serve hot with crostini on the side.
