Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.
- 2
Prepare the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.
- 3
Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated pecorino cheese, and black pepper until well combined.
- 4
Combine and Serve
Add the hot spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing well to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Season with salt and more black pepper if needed. Serve immediately.
