Make the Cavatelli
In a mixing bowl, combine semolina flour and salt. Gradually add water, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.

Shape the Cavatelli
Divide the dough into small pieces (about the size of a walnut). Roll each piece into a rope about 1/2 inch thick. Cut into 1-inch pieces. Use a fork to press and roll each piece to create the cavatelli shape. Place on a floured surface.

Cook the Sausage
In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through, breaking it apart with a spoon, about 7-10 minutes.

Add Greens and Beans
Stir in the chopped greens and cannellini beans into the skillet with sausage. Cook until greens are wilted, about 4-5 minutes. Season with black pepper to taste.

Combine and Serve
Gently toss the cavatelli with the sausage, greens, and beans. Serve warm, topped with grated caciocavallo cheese.
