    Prepare the Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain, let cool, then cut into bite-sized pieces.

    Blanch the Asparagus

    Trim the asparagus and blanch in boiling water for 2-3 minutes until bright green. Transfer to an ice bath to stop the cooking process. Once cooled, cut into 2-inch pieces.

    Slice the Vegetables

    Thinly slice the red onion and tomato.

    Combine the Greens

    In a large salad bowl, combine frisée, arugula, and blanched asparagus.

    Add Remaining Ingredients

    Add the sliced potatoes, red onion, tomato, capers, and Castelvetrano olives to the bowl.

    Crumble the aged goat cheese over the salad. Drizzle with olive oil and season with salt and pepper to taste. Toss gently to combine.
