Prepare the Banana Peppers
Preheat the oven to 375°F (190°C). Cut the tops off the banana peppers and remove the seeds carefully.

Make the Filling
In a mixing bowl, combine crumbled gorgonzola cheese, chopped anchovy fillets, minced garlic, a drizzle of olive oil, salt, and black pepper. Mix until well combined.

Stuff the Peppers
Spoon the gorgonzola mixture into each banana pepper until they are fully stuffed.

Bake the Peppers
Place the stuffed banana peppers on a baking sheet and drizzle with a little more olive oil. Bake in the preheated oven for about 20-25 minutes or until the peppers are tender and slightly charred.

Prepare the Crostini
While the peppers are baking, prepare the crostini by toasting the slices of bread in the oven until golden brown.

Serve
Once the peppers are cooked, remove them from the oven. Garnish with chopped fresh parsley and serve warm alongside the crostini.
