Preparation and Cooking Steps

    Prepare the Gorgonzola Butter

    In a small bowl, mix the gorgonzola cheese and unsalted butter together until well combined. Set aside.

    Prepare the Gratinato

    Preheat your oven to 375°F (190°C). Slice the leeks, potatoes, and mushrooms. In a pot, heat olive oil over medium heat, then add the leeks and cook until softened. Add the potatoes and mushrooms, season with salt and pepper, and cook for 5-7 minutes.

    Bake the Gratinato

    Transfer the mixture to a baking dish, cover with foil, and bake in the preheated oven for about 30 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and crispy on top.

    Grill the Filet Mignon

    Preheat the grill to high heat. Season the filet mignon with salt and black pepper. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Sauté the Escarole

    In a skillet, heat a little olive oil over medium heat. Add the escarole and sauté until wilted, about 3-4 minutes. Season with salt and pepper.

    Plate and Serve

    On each plate, place a portion of the gratinato, top with the grilled filet mignon, add a dollop of gorgonzola butter on top of the steak, and drizzle demi-glace around. Garnish with sautéed escarole.
