    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm, but not boiling.

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about a cup of the warm milk mixture into the egg yolks, whisking constantly to temper the eggs. Then, pour the egg yolk mixture back into the saucepan with the remaining milk mixture.

    Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.
