Prepare the Cauliflower
Remove the leaves from the cauliflower and cut it into bite-sized florets.

Coat the Cauliflower
In a mixing bowl, combine cornstarch, chili powder, garlic powder, salt, and black pepper. Toss the cauliflower florets in the mixture until well coated.

Heat the Oil
In a large skillet or deep fryer, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cauliflower
Carefully add the coated cauliflower florets to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Vinaigrette
In a small bowl, whisk together capers, lemon juice, and a pinch of salt and pepper to create the spicy chili-caper vinaigrette.

Serve
Plate the fried cauliflower, drizzle with the spicy chili-caper vinaigrette, and sprinkle with Marcona almonds before serving.
